ERYTHRITOL belongs to polyols, i.e. polyhydroxy (sugar) alcohols. It is produced in the process of natural fermentation. It is found in vegetables, fruits (e.g. grapes, pears), mushrooms, seaweed or wine. Its sweetness is equivalent to 60-70% of that of sucrose. In addition, this sweetener causes a pleasant cooling sensation in the mouth.
